- 170g Sirloin Steak
- 120g quinoa
- 80g cauliflower
- 80g spinach
- 80g onion
- 150g chopped tomatoes
- 6g garlic
- 5g ginger
- 1 tsp each cumin, turmeric & garam masala
- fresh coriander
Method
-
1
Prep everything first: wash and trim the cauliflower and spinach, then measure out the sauce ingredients.
-
2
Rinse the quinoa and simmer in 2 parts water for 15 minutes until the tails appear, then fluff.
-
3
Bring the steak to room temperature, season, and sear in a smoking-hot pan for 2-3 minutes per side for medium-rare. Rest for 5 minutes, then slice against the grain.
-
4
Soften the onion for 5 minutes, add garlic, ginger and spices for 1 minute, then pour in the tomatoes and simmer for 10 minutes into a thick masala.
-
5
Meanwhile, steam or stir-fry the cauliflower and spinach for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: quinoa first, then the veg and sirloin steak, spooning over any remaining sauce. Finish with the fresh coriander.
