Light Teriyaki Pork Tenderloin, Soba Noodles & Beansprouts Plate
Big flavour, sensible numbers. This Japanese plate pairs pork tenderloin with soba noodles for 54g protein and roughly 464 kcal.
Ingredients
- 150g Pork Tenderloin
- 130g soba noodles
- 80g tenderstem broccoli
- 80g bean sprouts
- 30g teriyaki sauce
- 2 cloves garlic, grated
- 5g ginger
- 5g sesame seeds
Method
-
1
Prep everything first: wash and trim the tenderstem and beansprouts, then measure out the sauce ingredients.
-
2
Boil the soba noodles for 4-5 minutes, then rinse in cold water to remove starch.
-
3
Sear the pork tenderloin on all sides, then roast at 200°C for 15-18 minutes until it reaches 63°C inside. Rest before slicing into medallions.
-
4
Whisk the teriyaki sauce with the grated garlic and ginger. Add to the pan for the final 2 minutes and let it bubble into a sticky glaze.
-
5
Meanwhile, steam or stir-fry the tenderstem and beansprouts for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: soba noodles first, then the veg and pork tenderloin, spooning over any remaining sauce. Finish with the sesame seeds.
