Tikka Chicken Breast with Wild Rice, Butternut Squash & Green Beans
A cosy Indian bowl: chicken breast with wild rice, butternut squash and green beans. Around 549 kcal and 61g protein per portion.
Ingredients
- 150g Chicken Breast
- 120g wild rice
- 80g butternut squash
- 80g green beans
- 25g curry paste
- 60g greek yoghurt
- 10g lemon juice
- fresh coriander & a pinch of garam masala
Method
-
1
Prep everything first: wash and trim the butternut squash and green beans, then measure out the sauce ingredients.
-
2
Cook the wild rice blend according to the pack, usually 20-25 minutes, then drain.
-
3
Season the chicken breast, butterfly it so it cooks evenly, then grill or pan-sear over medium-high heat for 5-6 minutes per side until the juices run clear (75°C in the thickest part).
-
4
Combine the tikka paste, yoghurt and lemon juice. Coat the protein and leave for at least 10 minutes (or overnight) before cooking.
-
5
Meanwhile, steam or stir-fry the butternut squash and green beans for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: wild rice first, then the veg and chicken breast, spooning over any remaining sauce. Finish with the fresh coriander & a pinch of garam masala.
