Big Balsamic-glazed Duck Breast with Soft Polenta, Green Beans & Courgette
Big flavour, sensible numbers. This Italian plate pairs duck breast with soft polenta for 64g protein and roughly 958 kcal.
Ingredients
- 200g Duck Breast
- 340g polenta
- 80g green beans
- 80g courgette
- 15g balsamic vinegar
- 5g honey
- 3g garlic
- 5g olive oil
- 30g goat's cheese
- 15g walnuts
- 20g rocket
Method
-
1
Prep everything first: wash and trim the green beans and courgette, then measure out the sauce ingredients.
-
2
Whisk the polenta into simmering stock and cook, stirring, for 5 minutes until thick and creamy.
-
3
Pan-roast the duck breast for 4 minutes per side, then rest for 5 minutes and slice thinly.
-
4
Simmer the balsamic vinegar with honey and garlic for 2-3 minutes until syrupy. Drizzle over the protein and veg.
-
5
Meanwhile, steam or stir-fry the green beans and courgette for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: soft polenta first, then the veg and duck breast, spooning over any remaining sauce. Finish with the rocket.
-
7
Bulking upgrade: add the goat's cheese, walnuts for extra energy-dense calories.
