Big Balsamic-glazed Soft-boiled Egg & New Potatoes Bowl with Mushrooms
A zingy Italian bowl: soft-boiled egg with new potatoes, mushrooms and kale. Around 836 kcal and 41g protein per portion.
Ingredients
- 3 large eggs
- 340g new potatoes
- 80g mushrooms
- 80g kale
- 15g balsamic vinegar
- 5g honey
- 3g garlic
- 5g olive oil
- 30g goat's cheese
- 15g walnuts
- 20g rocket
Method
-
1
Prep everything first: wash and trim the mushrooms and kale, then measure out the sauce ingredients.
-
2
Boil the new potatoes in salted water for 15-18 minutes until a knife slides in easily, then halve.
-
3
Lower the eggs into boiling water and cook for 6½ minutes, then cool in cold water and peel.
-
4
Simmer the balsamic vinegar with honey and garlic for 2-3 minutes until syrupy. Drizzle over the protein and veg.
-
5
Meanwhile, steam or stir-fry the mushrooms and kale for 3-5 minutes until just tender with a little bite.
-
6
Build the bowl: new potatoes first, then the veg and soft-boiled egg, spooning over any remaining sauce. Finish with the rocket.

7
Bulking upgrade: add the goat's cheese, walnuts for extra energy-dense calories.
