Big Chimichurri Sirloin Steak, Wild Rice & Courgette Plate
A colourful Argentinian bowl: sirloin steak with wild rice, spinach and courgette. Around 1053 kcal and 87g protein per portion.
Ingredients
- 230g Sirloin Steak
- 255g wild rice
- 80g spinach
- 80g courgette
- 10g olive oil
- 6g garlic
- 10g lemon juice
- large handful of parsley & oregano, chilli flakes
- 10g olive oil
- 60g avocado
- 15g red onion
Method
-
1
Prep everything first: wash and trim the spinach and courgette, then measure out the sauce ingredients.
-
2
Cook the wild rice blend according to the pack, usually 20-25 minutes, then drain.
-
3
Bring the steak to room temperature, season, and sear in a smoking-hot pan for 2-3 minutes per side for medium-rare. Rest for 5 minutes, then slice against the grain.
-
4
Finely chop the herbs and mix with the garlic, olive oil, lemon juice and chilli flakes. Spoon the chimichurri over the sliced protein.
-
5
Meanwhile, steam or stir-fry the spinach and courgette for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: wild rice first, then the veg and sirloin steak, spooning over any remaining sauce. Finish with the red onion.
-
7
Bulking upgrade: add the olive oil, avocado for extra energy-dense calories.
