Big Miso-Ginger Duck Breast & Quinoa Bowl with Carrot
Big flavour, sensible numbers. This Japanese plate pairs duck breast with quinoa for 66g protein and roughly 1019 kcal.
Ingredients
- 200g Duck Breast
- 255g quinoa
- 80g carrots
- 80g mushrooms
- 15g miso paste
- 5g ginger
- 5g honey
- 3g sesame oil
- 70g avocado
- 5g sesame oil
- 5g sesame seeds
Method
-
1
Prep everything first: wash and trim the carrot and mushrooms, then measure out the sauce ingredients.
-
2
Rinse the quinoa and simmer in 2 parts water for 15 minutes until the tails appear, then fluff.
-
3
Pan-roast the duck breast for 4 minutes per side, then rest for 5 minutes and slice thinly.
-
4
Whisk the miso, grated ginger, honey and sesame oil with a tablespoon of warm water. Brush over the protein and drizzle the rest over the bowl.
-
5
Meanwhile, steam or stir-fry the carrot and mushrooms for 3-5 minutes until just tender with a little bite.
-
6
Build the bowl: quinoa first, then the veg and duck breast, spooning over any remaining sauce. Finish with the sesame seeds.
-
7
Bulking upgrade: add the avocado, sesame oil for extra energy-dense calories.
