Ingredients
- 200g Chicken Breast
- 270g soba noodles
- 80g edamame beans
- 80g mangetout
- 40g peanut satay sauce
- 15g juice of ½ lime
- 5g soy sauce
- 15g peanut butter
- 50g coconut milk
- 10g peanuts
Method
-
1
Prep everything first: wash and trim the edamame and mangetout, then measure out the sauce ingredients.
-
2
Boil the soba noodles for 4-5 minutes, then rinse in cold water to remove starch.
-
3
Season the chicken breast, butterfly it so it cooks evenly, then grill or pan-sear over medium-high heat for 5-6 minutes per side until the juices run clear (75°C in the thickest part).
-
4
Warm the satay sauce with the lime juice, soy and a splash of hot water until pourable. Drizzle over everything to serve.
-
5
Meanwhile, steam or stir-fry the edamame and mangetout for 3-5 minutes until just tender with a little bite.
-
6
Build the bowl: soba noodles first, then the veg and chicken breast, spooning over any remaining sauce. Finish with the peanuts.
