Big Tikka Chicken Breast with Brown Rice, Peppers & Green Beans
Ready in about 40 minutes, this punchy chicken breast and brown rice dish is built for clean bulking — 1047 kcal and 85g protein.
Ingredients
- 200g Chicken Breast
- 255g brown rice
- 80g red pepper
- 80g green beans
- 25g curry paste
- 60g greek yoghurt
- 10g lemon juice
- 65g ½ naan
- 5g ghee
- fresh coriander & a pinch of garam masala
Method
-
1
Prep everything first: wash and trim the peppers and green beans, then measure out the sauce ingredients.
-
2
Simmer the brown rice in plenty of water for 25 minutes until tender, then drain.
-
3
Season the chicken breast, butterfly it so it cooks evenly, then grill or pan-sear over medium-high heat for 5-6 minutes per side until the juices run clear (75°C in the thickest part).
-
4
Combine the tikka paste, yoghurt and lemon juice. Coat the protein and leave for at least 10 minutes (or overnight) before cooking.
-
5
Meanwhile, steam or stir-fry the peppers and green beans for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: brown rice first, then the veg and chicken breast, spooning over any remaining sauce. Finish with the fresh coriander & a pinch of garam masala.

Bulking upgrade: add the ½ naan, ghee for extra energy-dense calories.
