Ingredients
- 3 large eggs
- 340g sweet potato
- 80g butternut squash
- 80g red pepper
- 25g curry paste
- 60g greek yoghurt
- 10g lemon juice
- 65g ½ naan
- 5g ghee
- fresh coriander & a pinch of garam masala
Method
-
1
Prep everything first: wash and trim the butternut squash and peppers, then measure out the sauce ingredients.
-
2
Cube the sweet potato and roast at 200°C for 25 minutes until soft and caramelised.
-
3
Lower the eggs into boiling water and cook for 6½ minutes, then cool in cold water and peel.
-
4
Combine the tikka paste, yoghurt and lemon juice. Coat the protein and leave for at least 10 minutes (or overnight) before cooking.
-
5
Meanwhile, steam or stir-fry the butternut squash and peppers for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: sweet potato first, then the veg and soft-boiled egg, spooning over any remaining sauce. Finish with the fresh coriander & a pinch of garam masala.
-
7
Bulking upgrade: add the ½ naan, ghee for extra energy-dense calories.
