Chimichurri Black Bean, Soft Polenta & Peppers Plate
Big flavour, sensible numbers. This Argentinian plate pairs black bean with soft polenta for 20g protein and roughly 513 kcal.
Ingredients
- 200g black beans
- 200g polenta
- 80g cherry tomatoes
- 80g red pepper
- 10g olive oil
- 6g garlic
- 10g lemon juice
- large handful of parsley & oregano, chilli flakes
- 15g red onion
Method
-
1
Prep everything first: wash and trim the cherry tomatoes and peppers, then measure out the sauce ingredients.
-
2
Whisk the polenta into simmering stock and cook, stirring, for 5 minutes until thick and creamy.
-
3
Warm the black beans in a pan with a splash of water and the seasoning, lightly crushing a few to thicken.
-
4
Finely chop the herbs and mix with the garlic, olive oil, lemon juice and chilli flakes. Spoon the chimichurri over the sliced protein.
-
5
Meanwhile, steam or stir-fry the cherry tomatoes and peppers for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: soft polenta first, then the veg and black bean, spooning over any remaining sauce. Finish with the red onion.
