Big flavour, sensible numbers. This Italian plate pairs green lentil with soft polenta for 43g protein and roughly 850 kcal.
Ingredients
- 270g lentils
- 340g polenta
- 80g kale
- 80g courgette
- 15g balsamic vinegar
- 5g honey
- 3g garlic
- 5g olive oil
- 30g goat's cheese
- 15g walnuts
- 20g rocket
Method
-
1
Prep everything first: wash and trim the kale and courgette, then measure out the sauce ingredients.
-
2
Whisk the polenta into simmering stock and cook, stirring, for 5 minutes until thick and creamy.
-
3
Simmer the cooked green lentils with a splash of stock for 5 minutes until they absorb the flavours.
-
4
Simmer the balsamic vinegar with honey and garlic for 2-3 minutes until syrupy. Drizzle over the protein and veg.
-
5
Meanwhile, steam or stir-fry the kale and courgette for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: soft polenta first, then the veg and green lentil, spooning over any remaining sauce. Finish with the rocket.
-
7
Bulking upgrade: add the goat's cheese, walnuts for extra energy-dense calories.
