Mass-Builder Cajun-spiced Chicken Breast, New Potatoes & Green Beans Plate
A zingy Cajun bowl: chicken breast with new potatoes, sweetcorn and green beans. Around 881 kcal and 78g protein per portion.
Ingredients
- 200g Chicken Breast
- 340g new potatoes
- 80g sweetcorn
- 80g green beans
- 2 tsp Cajun seasoning
- 10g lemon juice
- 50g greek yoghurt
- 80g avocado
- 5g olive oil
- chopped parsley
Method
-
1
Prep everything first: wash and trim the sweetcorn and green beans, then measure out the sauce ingredients.
-
2
Boil the new potatoes in salted water for 15-18 minutes until a knife slides in easily, then halve.
-
3
Season the chicken breast, butterfly it so it cooks evenly, then grill or pan-sear over medium-high heat for 5-6 minutes per side until the juices run clear (75°C in the thickest part).
-
4
Coat the protein generously in Cajun seasoning. Mix the yoghurt with lemon juice and a pinch of the spice to make a cooling dip.
-
5
Meanwhile, steam or stir-fry the sweetcorn and green beans for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: new potatoes first, then the veg and chicken breast, spooning over any remaining sauce. Finish with the chopped parsley.

Bulking upgrade: add the avocado, olive oil for extra energy-dense calories.
