A fresh Cajun bowl: sirloin steak with quinoa, courgette and green beans. Around 1024 kcal and 92g protein per portion.
Ingredients
- 230g Sirloin Steak
- 255g quinoa
- 80g courgette
- 80g green beans
- 2 tsp Cajun seasoning
- 10g lemon juice
- 50g greek yoghurt
- 80g avocado
- 5g olive oil
- chopped parsley
Method
-
1
Prep everything first: wash and trim the courgette and green beans, then measure out the sauce ingredients.
-
2
Rinse the quinoa and simmer in 2 parts water for 15 minutes until the tails appear, then fluff.
-
3
Bring the steak to room temperature, season, and sear in a smoking-hot pan for 2-3 minutes per side for medium-rare. Rest for 5 minutes, then slice against the grain.
-
4
Coat the protein generously in Cajun seasoning. Mix the yoghurt with lemon juice and a pinch of the spice to make a cooling dip.
-
5
Meanwhile, steam or stir-fry the courgette and green beans for 3-5 minutes until just tender with a little bite.
-
6
Build the bowl: quinoa first, then the veg and sirloin steak, spooning over any remaining sauce. Finish with the chopped parsley.

Bulking upgrade: add the avocado, olive oil for extra energy-dense calories.
