Mass-Builder Chimichurri Lean Beef & New Potatoes Bowl with Cherry Tomatoes
A hearty Argentinian bowl: lean beef with new potatoes, cherry tomatoes and spinach. Around 901 kcal and 59g protein per portion.
Ingredients
- 190g Beef Mince
- 340g new potatoes
- 80g cherry tomatoes
- 80g spinach
- 10g olive oil
- 6g garlic
- 10g lemon juice
- large handful of parsley & oregano, chilli flakes
- 10g olive oil
- 60g avocado
- 15g red onion
Method
-
1
Prep everything first: wash and trim the cherry tomatoes and spinach, then measure out the sauce ingredients.
-
2
Boil the new potatoes in salted water for 15-18 minutes until a knife slides in easily, then halve.
-
3
Brown the lean beef mince in a hot pan for 6-8 minutes, breaking it up, then drain any excess fat.
-
4
Finely chop the herbs and mix with the garlic, olive oil, lemon juice and chilli flakes. Spoon the chimichurri over the sliced protein.
-
5
Meanwhile, steam or stir-fry the cherry tomatoes and spinach for 3-5 minutes until just tender with a little bite.
-
6
Build the bowl: new potatoes first, then the veg and lean beef, spooning over any remaining sauce. Finish with the red onion.
-
7
Bulking upgrade: add the olive oil, avocado for extra energy-dense calories.
