A cosy Argentinian bowl: tuna steak with quinoa, green beans and asparagus. Around 904 kcal and 72g protein per portion.
Ingredients
- 200g Tuna Steak
- 255g quinoa
- 80g green beans
- 80g asparagus
- 10g olive oil
- 6g garlic
- 10g lemon juice
- large handful of parsley & oregano, chilli flakes
- 10g olive oil
- 60g avocado
- 15g red onion
Method
-
1
Prep everything first: wash and trim the green beans and asparagus, then measure out the sauce ingredients.
-
2
Rinse the quinoa and simmer in 2 parts water for 15 minutes until the tails appear, then fluff.
-
3
Sear the tuna steak in a very hot pan for 60-90 seconds per side, keeping the centre pink, then slice.
-
4
Finely chop the herbs and mix with the garlic, olive oil, lemon juice and chilli flakes. Spoon the chimichurri over the sliced protein.
-
5
Meanwhile, steam or stir-fry the green beans and asparagus for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: quinoa first, then the veg and tuna steak, spooning over any remaining sauce. Finish with the red onion.
-
7
Bulking upgrade: add the olive oil, avocado for extra energy-dense calories.
