Big flavour, sensible numbers. This Korean plate pairs lamb with soba noodles for 78g protein and roughly 987 kcal.
Ingredients
- 175g Lamb Leg
- 270g soba noodles
- 80g bean sprouts
- 80g cucumber
- 10g sriracha
- 15g soy sauce
- 10g honey
- 6g garlic
- 3g sesame oil
- 1 fried egg
- 5g sesame oil
- 5g sesame seeds
Method
-
1
Prep everything first: wash and trim the beansprouts and cucumber, then measure out the sauce ingredients.
-
2
Boil the soba noodles for 4-5 minutes, then rinse in cold water to remove starch.
-
3
Cut the lamb into strips, season well and stir-fry or griddle over high heat for 4-5 minutes until browned but still juicy.
-
4
Whisk the hot sauce, soy, honey, garlic and sesame oil. Add to the pan and bubble for 1-2 minutes until thick and glossy.
-
5
Meanwhile, steam or stir-fry the beansprouts and cucumber for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: soba noodles first, then the veg and lamb, spooning over any remaining sauce. Finish with the sesame seeds.
-
7
Bulking upgrade: add the 1 fried egg, sesame oil for extra energy-dense calories.
