Mass-Builder Teriyaki Salmon & Soba Noodles Bowl with Mushrooms
Big flavour, sensible numbers. This Japanese plate pairs salmon with soba noodles for 60g protein and roughly 864 kcal.
Ingredients
- 175g Salmon Fillet
- 270g soba noodles
- 80g mushrooms
- 80g pak choi
- 30g teriyaki sauce
- 2 cloves garlic, grated
- 5g ginger
- 5g sesame oil
- 60g avocado
- 5g sesame seeds
Method
-
1
Prep everything first: wash and trim the mushrooms and pak choi, then measure out the sauce ingredients.
-
2
Boil the soba noodles for 4-5 minutes, then rinse in cold water to remove starch.
-
3
Place the salmon on a lined tray, brush with some of the sauce and bake at 200°C for 12-14 minutes until it flakes easily.
-
4
Whisk the teriyaki sauce with the grated garlic and ginger. Add to the pan for the final 2 minutes and let it bubble into a sticky glaze.
-
5
Meanwhile, steam or stir-fry the mushrooms and pak choi for 3-5 minutes until just tender with a little bite.
-
6
Build the bowl: soba noodles first, then the veg and salmon, spooning over any remaining sauce. Finish with the sesame seeds.
-
7
Bulking upgrade: add the sesame oil, avocado for extra energy-dense calories.
