Tikka Lean Beef with Sweet Potato, Cauliflower & Peppers
Big flavour, sensible numbers. This Indian plate pairs lean beef with sweet potato for 50g protein and roughly 578 kcal.
Ingredients
- 140g Beef Mince
- 200g sweet potato
- 80g cauliflower
- 80g red pepper
- 25g curry paste
- 60g greek yoghurt
- 10g lemon juice
- fresh coriander & a pinch of garam masala
Method
-
1
Prep everything first: wash and trim the cauliflower and peppers, then measure out the sauce ingredients.
-
2
Cube the sweet potato and roast at 200°C for 25 minutes until soft and caramelised.
-
3
Brown the lean beef mince in a hot pan for 6-8 minutes, breaking it up, then drain any excess fat.
-
4
Combine the tikka paste, yoghurt and lemon juice. Coat the protein and leave for at least 10 minutes (or overnight) before cooking.
-
5
Meanwhile, steam or stir-fry the cauliflower and peppers for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: sweet potato first, then the veg and lean beef, spooning over any remaining sauce. Finish with the fresh coriander & a pinch of garam masala.
