Big Greek-style Black Bean, Wholewheat Pasta & Spinach Plate
A zingy Greek bowl: black bean with wholewheat pasta, peppers and spinach. Around 1030 kcal and 48g protein per portion.
Ingredients
- 270g black beans
- 270g pasta
- 80g red pepper
- 80g spinach
- 50g tzatziki
- 10g lemon juice
- 30g red onion
- 1 tsp dried oregano & smoked paprika
- 60g pitta bread
- 5g olive oil
- 40g cucumber
Method
-
1
Prep everything first: wash and trim the peppers and spinach, then measure out the sauce ingredients.
-
2
Cook the wholewheat pasta in salted boiling water for 10-12 minutes until al dente; save a splash of pasta water.
-
3
Warm the black beans in a pan with a splash of water and the seasoning, lightly crushing a few to thicken.
-
4
Rub the protein with oregano, paprika and lemon. Spoon over cool tzatziki and scatter with the sliced red onion when serving.
-
5
Meanwhile, steam or stir-fry the peppers and spinach for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: wholewheat pasta first, then the veg and black bean, spooning over any remaining sauce. Finish with the cucumber.
-
7
Bulking upgrade: add the pitta bread, olive oil for extra energy-dense calories.
