Big Tikka Pork Tenderloin & Quinoa Bowl with Green Beans
A fresh Indian bowl: pork tenderloin with quinoa, green beans and butternut squash. Around 1007 kcal and 79g protein per portion.
Ingredients
- 200g Pork Tenderloin
- 255g quinoa
- 80g green beans
- 80g butternut squash
- 25g curry paste
- 60g greek yoghurt
- 10g lemon juice
- 65g ½ naan
- 5g ghee
- fresh coriander & a pinch of garam masala
Method
-
1
Prep everything first: wash and trim the green beans and butternut squash, then measure out the sauce ingredients.
-
2
Rinse the quinoa and simmer in 2 parts water for 15 minutes until the tails appear, then fluff.
-
3
Sear the pork tenderloin on all sides, then roast at 200°C for 15-18 minutes until it reaches 63°C inside. Rest before slicing into medallions.
-
4
Combine the tikka paste, yoghurt and lemon juice. Coat the protein and leave for at least 10 minutes (or overnight) before cooking.
-
5
Meanwhile, steam or stir-fry the green beans and butternut squash for 3-5 minutes until just tender with a little bite.
-
6
Build the bowl: quinoa first, then the veg and pork tenderloin, spooning over any remaining sauce. Finish with the fresh coriander & a pinch of garam masala.

Bulking upgrade: add the ½ naan, ghee for extra energy-dense calories.
