Lean Cajun-spiced Chickpea with New Potatoes, Spinach & Green Beans
A bright Cajun bowl: chickpea with new potatoes, spinach and green beans. Around 457 kcal and 26g protein per portion.
Ingredients
- 200g chickpeas
- 160g new potatoes
- 80g spinach
- 80g green beans
- 2 tsp Cajun seasoning
- 10g lemon juice
- 50g greek yoghurt
- chopped parsley
Method
-
1
Prep everything first: wash and trim the spinach and green beans, then measure out the sauce ingredients.
-
2
Boil the new potatoes in salted water for 15-18 minutes until a knife slides in easily, then halve.
-
3
Pat the chickpeas dry and roast at 200°C for 20 minutes until crisp, tossing halfway.
-
4
Coat the protein generously in Cajun seasoning. Mix the yoghurt with lemon juice and a pinch of the spice to make a cooling dip.
-
5
Meanwhile, steam or stir-fry the spinach and green beans for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: new potatoes first, then the veg and chickpea, spooning over any remaining sauce. Finish with the chopped parsley.
