Big flavour, sensible numbers. This Mexican plate pairs lamb with sweet potato for 69g protein and roughly 1071 kcal.
Ingredients
- 175g Lamb Leg
- 340g sweet potato
- 80g sweetcorn
- 80g cherry tomatoes
- 8g sriracha
- 15g lime
- 50g greek yoghurt
- 1 tsp chipotle chilli flakes & cumin
- 80g avocado
- 20g tortilla chips
- fresh coriander
Method
-
1
Prep everything first: wash and trim the sweetcorn and cherry tomatoes, then measure out the sauce ingredients.
-
2
Cube the sweet potato and roast at 200°C for 25 minutes until soft and caramelised.
-
3
Cut the lamb into strips, season well and stir-fry or griddle over high heat for 4-5 minutes until browned but still juicy.
-
4
Rub the protein with chipotle and cumin. Stir the hot sauce and lime into the yoghurt for a smoky crema.
-
5
Meanwhile, steam or stir-fry the sweetcorn and cherry tomatoes for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: sweet potato first, then the veg and lamb, spooning over any remaining sauce. Finish with the fresh coriander.
-
7
Bulking upgrade: add the avocado, tortilla chips for extra energy-dense calories.
