Mass-Builder Tikka Halloumi with Sweet Potato, Green Beans & Butternut Squash
Big flavour, sensible numbers. This Indian plate pairs halloumi with sweet potato for 46g protein and roughly 1074 kcal.
Ingredients
- 110g halloumi
- 340g sweet potato
- 80g green beans
- 80g butternut squash
- 25g curry paste
- 60g greek yoghurt
- 10g lemon juice
- 65g ½ naan
- 5g ghee
- fresh coriander & a pinch of garam masala
Method
-
1
Prep everything first: wash and trim the green beans and butternut squash, then measure out the sauce ingredients.
-
2
Cube the sweet potato and roast at 200°C for 25 minutes until soft and caramelised.
-
3
Slice the halloumi and dry-fry in a griddle pan for 2 minutes per side until charred.
-
4
Combine the tikka paste, yoghurt and lemon juice. Coat the protein and leave for at least 10 minutes (or overnight) before cooking.
-
5
Meanwhile, steam or stir-fry the green beans and butternut squash for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: sweet potato first, then the veg and halloumi, spooning over any remaining sauce. Finish with the fresh coriander & a pinch of garam masala.
-
7
Bulking upgrade: add the ½ naan, ghee for extra energy-dense calories.
