Ingredients
- 200g Pork Tenderloin
- 255g couscous
- 80g courgette
- 80g red pepper
- 20g harissa paste
- 10g lemon juice
- 50g greek yoghurt
- 10g olive oil
- 30g pomegranate seeds
- fresh mint
Method
-
1
Prep everything first: wash and trim the courgette and peppers, then measure out the sauce ingredients.
-
2
Pour just-boiled stock over the couscous, cover for 5 minutes, then fluff with a fork.
-
3
Sear the pork tenderloin on all sides, then roast at 200°C for 15-18 minutes until it reaches 63°C inside. Rest before slicing into medallions.
-
4
Loosen the harissa with lemon juice and brush it over the protein before cooking. Swirl a little extra harissa through the yoghurt to serve.
-
5
Meanwhile, steam or stir-fry the courgette and peppers for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: couscous first, then the veg and pork tenderloin, spooning over any remaining sauce. Finish with the fresh mint.
-
7
Bulking upgrade: add the olive oil, pomegranate seeds for extra energy-dense calories.
