Mass-Builder Hoisin Lean Beef, Udon Noodles & Red Cabbage Plate
Big flavour, sensible numbers. This Chinese plate pairs lean beef with udon noodles for 73g protein and roughly 990 kcal.
Ingredients
- 190g Beef Mince
- 305g udon noodles
- 80g edamame beans
- 80g red cabbage
- 25g hoisin sauce
- 15g spring onions
- 3g garlic
- pinch of Chinese five-spice
- 20g cashews
- 5g sesame oil
- 40g cucumber
Method
-
1
Prep everything first: wash and trim the edamame and red cabbage, then measure out the sauce ingredients.
-
2
Loosen the udon noodles in boiling water for 2 minutes and drain.
-
3
Brown the lean beef mince in a hot pan for 6-8 minutes, breaking it up, then drain any excess fat.
-
4
Season with five-spice, then toss in hoisin and garlic over high heat for the last minute until sticky.
-
5
Meanwhile, steam or stir-fry the edamame and red cabbage for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: udon noodles first, then the veg and lean beef, spooning over any remaining sauce. Finish with the cucumber.
-
7
Bulking upgrade: add the cashews, sesame oil for extra energy-dense calories.
