Big Balsamic-glazed Soft-boiled Egg with Bulgur Wheat, Spinach & Kale
Big flavour, sensible numbers. This Italian plate pairs soft-boiled egg with bulgur wheat for 44g protein and roughly 806 kcal.
Ingredients
- 3 large eggs
- 270g bulgur wheat
- 80g spinach
- 80g kale
- 15g balsamic vinegar
- 5g honey
- 3g garlic
- 5g olive oil
- 30g goat's cheese
- 15g walnuts
- 20g rocket
Method
-
1
Prep everything first: wash and trim the spinach and kale, then measure out the sauce ingredients.
-
2
Simmer the bulgur wheat for 10-12 minutes until tender, then drain well.
-
3
Lower the eggs into boiling water and cook for 6½ minutes, then cool in cold water and peel.
-
4
Simmer the balsamic vinegar with honey and garlic for 2-3 minutes until syrupy. Drizzle over the protein and veg.
-
5
Meanwhile, steam or stir-fry the spinach and kale for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: bulgur wheat first, then the veg and soft-boiled egg, spooning over any remaining sauce. Finish with the rocket.
-
7
Bulking upgrade: add the goat's cheese, walnuts for extra energy-dense calories.
