Big Greek-style Salmon with Gluten-free Pasta, Mushrooms & Aubergine
A punchy Greek bowl: salmon with gluten-free pasta, mushrooms and aubergine. Around 1106 kcal and 58g protein per portion.
Ingredients
- 175g Salmon Fillet
- 270g gluten-free pasta
- 80g mushrooms
- 80g aubergine
- 50g tzatziki
- 10g lemon juice
- 30g red onion
- 1 tsp dried oregano & smoked paprika
- 60g pitta bread
- 5g olive oil
- 40g cucumber
Method
-
1
Prep everything first: wash and trim the mushrooms and aubergine, then measure out the sauce ingredients.
-
2
Cook the gluten-free pasta for 8-10 minutes, stirring often, and rinse briefly to stop it sticking.
-
3
Place the salmon on a lined tray, brush with some of the sauce and bake at 200°C for 12-14 minutes until it flakes easily.
-
4
Rub the protein with oregano, paprika and lemon. Spoon over cool tzatziki and scatter with the sliced red onion when serving.
-
5
Meanwhile, steam or stir-fry the mushrooms and aubergine for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: gluten-free pasta first, then the veg and salmon, spooning over any remaining sauce. Finish with the cucumber.
-
7
Bulking upgrade: add the pitta bread, olive oil for extra energy-dense calories.
