Big Tomato & Basil Chicken Breast with Gluten-free Pasta, Kale & Mushrooms
Big flavour, sensible numbers. This Italian plate pairs chicken breast with gluten-free pasta for 91g protein and roughly 1165 kcal.
Ingredients
- 200g Chicken Breast
- 270g gluten-free pasta
- 80g kale
- 80g mushrooms
- 200g chopped tomatoes
- 9g garlic
- 5g olive oil
- a handful of fresh basil
- 50g mozzarella
- 10g olive oil
- 8g parmesan
Method
-
1
Prep everything first: wash and trim the kale and mushrooms, then measure out the sauce ingredients.
-
2
Cook the gluten-free pasta for 8-10 minutes, stirring often, and rinse briefly to stop it sticking.
-
3
Season the chicken breast, butterfly it so it cooks evenly, then grill or pan-sear over medium-high heat for 5-6 minutes per side until the juices run clear (75°C in the thickest part).
-
4
Gently fry the garlic in the olive oil, add the chopped tomatoes and simmer for 10-12 minutes until rich. Tear in the basil at the end.
-
5
Meanwhile, steam or stir-fry the kale and mushrooms for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: gluten-free pasta first, then the veg and chicken breast, spooning over any remaining sauce. Finish with the parmesan.
-
7
Bulking upgrade: add the mozzarella, olive oil for extra energy-dense calories.
