Light Basil Pesto Sirloin Steak with Gnocchi, Asparagus & Green Beans
A cosy Italian bowl: sirloin steak with gnocchi, asparagus and green beans. Around 722 kcal and 66g protein per portion.
Ingredients
- 170g Sirloin Steak
- 130g gnocchi
- 80g asparagus
- 80g green beans
- 25g pesto
- 10g parmesan
- 3g garlic
- 20g rocket
Method
-
1
Prep everything first: wash and trim the asparagus and green beans, then measure out the sauce ingredients.
-
2
Pan-fry the gnocchi in a non-stick pan for 6-8 minutes until golden and crisp.
-
3
Bring the steak to room temperature, season, and sear in a smoking-hot pan for 2-3 minutes per side for medium-rare. Rest for 5 minutes, then slice against the grain.
-
4
Stir the pesto through the hot carbs with a splash of cooking water so it turns glossy, then top with grated parmesan.
-
5
Meanwhile, steam or stir-fry the asparagus and green beans for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: gnocchi first, then the veg and sirloin steak, spooning over any remaining sauce. Finish with the rocket.
