Mass-Builder Tikka Seitan with Quinoa, Cauliflower & Spinach
A zingy Indian bowl: seitan with quinoa, cauliflower and spinach. Around 1193 kcal and 130g protein per portion.
Ingredients
- 135g seitan
- 255g quinoa
- 80g cauliflower
- 80g spinach
- 25g curry paste
- 60g greek yoghurt
- 10g lemon juice
- 65g ½ naan
- 5g ghee
- fresh coriander & a pinch of garam masala
Method
-
1
Prep everything first: wash and trim the cauliflower and spinach, then measure out the sauce ingredients.
-
2
Rinse the quinoa and simmer in 2 parts water for 15 minutes until the tails appear, then fluff.
-
3
Slice the seitan thinly and stir-fry over high heat for 4-5 minutes until browned.
-
4
Combine the tikka paste, yoghurt and lemon juice. Coat the protein and leave for at least 10 minutes (or overnight) before cooking.
-
5
Meanwhile, steam or stir-fry the cauliflower and spinach for 3-5 minutes until just tender with a little bite.
-
6
Build the plate: quinoa first, then the veg and seitan, spooning over any remaining sauce. Finish with the fresh coriander & a pinch of garam masala.
-
7
Bulking upgrade: add the ½ naan, ghee for extra energy-dense calories.
