Teriyaki Seitan & Udon Noodles Bowl with Edamame
Big flavour, sensible numbers. This Japanese plate pairs seitan with udon noodles for 95g protein and roughly 748 kcal.
Ingredients
- 100g seitan
- 180g udon noodles
- 80g edamame beans
- 80g bean sprouts
- 30g teriyaki sauce
- 2 cloves garlic, grated
- 5g ginger
- 5g sesame seeds
Method
-
1
Prep everything first: wash and trim the edamame and beansprouts, then measure out the sauce ingredients.
-
2
Loosen the udon noodles in boiling water for 2 minutes and drain.
-
3
Slice the seitan thinly and stir-fry over high heat for 4-5 minutes until browned.
-
4
Whisk the teriyaki sauce with the grated garlic and ginger. Add to the pan for the final 2 minutes and let it bubble into a sticky glaze.
-
5
Meanwhile, steam or stir-fry the edamame and beansprouts for 3-5 minutes until just tender with a little bite.
-
6
Build the bowl: udon noodles first, then the veg and seitan, spooning over any remaining sauce. Finish with the sesame seeds.
